這碗是牛筋 牛肚 麵 湯頭有牛大骨加上少許的中藥材番茄還有一點砂糖醬色調製而成 因該是這些基本材料

在台灣的人 蔑視傳統小吃 一昧跑義式餐廳 法式餐廳 日式餐廳... 到了國外 看到台菜 或中菜 會噴淚 各位沒聽過某位作家的姊姊 住美國 回台灣 一下飛機 不是直奔自己的家裡 哪怕已經3更半夜 而是跑去吃小吃 吃到吐 至於加拿大的Kevin 真的只能建議你吃 阿X桶麵了 (不能幫人家打廣告) 很夠味 1桶 不用1塊加幣...

牛肉麵基本上分為台式牛肉麵與川味牛肉面兩種口味, 通常老饕講的是川味牛肉麵, 從小吃牛肉麵吃到老, 當我看到Kevin的照片就知道這家一定好吃, 在我記憶中最棒的一家是四十年前一個老人開的小小牛肉麵店, 那種口味是現在所有的牛肉麵店所不能及, 原因是精心熬煮的牛肉滷汁在製作時只有很少的量, 正常營業量的牛肉麵店用的原汁因為析釋以後湯頭就不夠濃郁, 那一家老麵店開在一個偏僻的地方, 因為生意很小才有那麼濃的原汁, 因此經過那麼多年以後那家的牛肉麵還是我的第一名.

我沒有那麼老, 倒是那個賣麵的老人可能經歷過對日抗戰, 國共戰爭之後流落台灣, 看起來是孤家寡人一個, 靠著家鄉牛肉麵的手藝混著過日子, 他一定沒有想到在幾十年後兩岸會和平相處, 有一些老人還能回去老家見到昔日的家人.
